New Michelin-Starred Dishes in Air France’s La Première and Business Cabins
Air France’s La Première and Business long-haul cabins will include new Michelin-starred cuisine prepared by renowned French chefs Arnaud Lallement and Michel Roth from November 2022 to February 2023. The renowned Michelin-starred chefs have produced sophisticated dishes for the airline’s clients to savour over the upcoming months by using carefully chosen seasonal produce, vegetarian compositions, red and white meats from France, and fish from sustainable fishing. Air France is continuing to provide the finest French gastronomy on board with the addition of this new exceptional meal service.
The Servair Culinary Studio, a leader in in-flight dining and a partner of Air France, was established in November 2009. It brings Michelin-starred chefs and industry professionals together to raise the bar for in-flight catering and apply the rules of haute cuisine to the meals of travellers from all over the world. Jol Robuchon founded the organisation, which is currently led by Regis Marcon and comprises Anne-Sophie Pic, Michel Roth, Guy Martin, as well as guest chefs like Emmanuel Renaut, Andrée Rosier, and Arnaud Lallement.
Chef Arnaud Lallement, who has earned three Michelin stars, serves up modern, gourmet cuisine in the La Première cabin. As a guest of the Servair Culinary Studio, he made an appetiser, two appetisers, and eight meals that are gradually being unveiled on the menu of the airline’s most luxurious cabin.
Arnaud Lallement, who was born into a family that ran the restaurant l’Assiette Champenoise, always wanted to be a chef. Arnaud Lallement received the title of chef of the year and 3 stars in the Michelin Guide at the age of less than 40 after completing an apprenticeship with the finest chefs. Arnaud Lallement still has strong ties to the essentials, including his native region, Champagne, his family circle, and his passion for cooking.
This serves as an enduring homage to his father, who passed away in 2002. Since his mother Colette, sister Mélanie, and wife Magali all work to maintain the welcoming environment and spirit of excellence at l’Assiette Champenoise, this virtuoso chef has chosen to compose an ode to his family even though his father is no longer present to witness his success. The tenet of the chef? refined food that is simple and uncomplicated. Arnaud Lallement approaches his cooking in the same way he approaches life: by getting right to the point and being as precise as he can. This “real food” strategy was a natural choice for Air France.

On the La Première menu:
- French Sturia caviar, smoked haddock, chive cream (appetizer);
- Langoustine, lemon caviar, creamy court-bouillon (starter);
- Scallops, green cabbage, coteaux Champenois sauce (starter);
- Tortellini, spinach, mushrooms, parmesan sauce;
- Celery, potato and comté pie, truffle cream;
- Black halibut, artichokes, yellow wine sauce;
- Lobster in homage to my dad, lobster jus;
- Free-range chicken, candied turnips, reduced jus;
- Pigeon pie, spinach, balsamic poultry jus;
- Beef confit, leek vinaigrette;
- Lamb, garden vegetables, lamb jus.
The La Première cabin is available this winter on selected flights to Los Angeles, Miami, New York-JFK, San Francisco, Washington-DC (United States), Mexico City (Mexico), Abidjan (Ivory Coast), Johannesburg (South Africa), Dubai (United Arab Emirates), Sao Paulo (Brazil) and Singapore.
Michelin-starred, Bocuse d’Or, and Meilleur Ouvrier de France chef Michel Roth serves up a new menu of elegant cuisine in the Business cabin. Eight delectable delicacies created in partnership with Servair will be gradually introduced for maximum culinary delight on board.
Michel Roth, a native of France’s Moselle region, grew up eating traditional Lorraine fare that was frequently served at friendly family gatherings. One of the best-known chefs in France, Michel Roth has won numerous accolades, including the Bocuse d’Or and Meilleur Ouvrier de France in 1991, the Chevalier de la Légion d’Honneur title in 2006, multiple Michelin stars, and the coveted Romand de l’année award in 2016 after receiving a score of 18/20 in Gault et Millau.
Michel Roth has spent his entire career working with the best French chefs in notable restaurants like L’Espadon at the renowned Ritz on Place Vendôme. Michel Roth is a dedicated and perfectionist chef with the technical talents, culinary traditions, and modern style to surprise everyone who tastes his meals, both on the shores of Lake Geneva and on board Air France planes. Since 2020, he has signed the menu for a brand-new Parisian eatery, La Table Cachée par Michel Roth, at the BHV Marais. He has been in charge of the Bayview at the Grand Hotel Président Wilson in Geneva since 2013. The chef also assumed management of the Baron restaurant at the Château de Ferrieres in the year 2022.

On the Business menu:
- Royale with wild mushrooms and hazelnuts, chestnut cream with lovage;
- Fillet of cod, shellfish juice with coriander, caramelized fennel;
- Chicken fillet with corn several ways and cranberry juice;
- Beef tenderloin, rare pepper sauce, vanilla celery and asparagus mousseline with almonds;
- Cod and salmon brandade, parsley coulis, leeks and buckwheat;
- Chicken supreme, spinach and wild mushroom fondue, crayfish coulis;
- Royale and cauliflower heads, Dubary tartuffon cream (pumpkin seeds with spices);
- Beef cheek with rosemary, mushrooms and figs, butternut purée with mustard.
Customers of Air France can now choose a hot meal in the Business class in advance of their flight as part of the company’s effort to reduce food waste. This service combines the assurance that the customer’s preferred option will be available with more equitable consumption on board.
Additionally, Air France has pledged to serve fish from sustainable fisheries and 100% French meat, dairy, and eggs on all of its flights leaving from Paris, beginning right away in the La Première and Business cabins and in all of its cabins by the end of the year.
Gulfstream G700 Makes Asia-Pacific Debut In Vietnam

Gulfstream Aerospace Corp. announced on 5 November 2022 that the all-new Gulfstream G700 is making its Asia-Pacific debut in Vietnam as the first stop in Asia on the G700 world tour. The G700 joins the Gulfstream G600 and Gulfstream G650ER at an exclusive event at Van Don International Airport in Quang Ninh Province, hosted by Sun Air LLC, the Hanoi-based business aviation service company and Gulfstream’s authorized international sales representative in Vietnam.
En route to Vietnam, the G700 set a new city-pair speed record, travelling from Istanbul to Van Don airport, 4,573 nautical miles/8,469 kilometres in 9 hours and 2 minutes at an average speed of Mach 0.90.
